Recipe: Mayonnaise

To make the perfect Mayonnaise a lots of patience is required. Especially when obstacles seem to come your way.

30 Minutes for preparation and making actually the mayonnaise should be calculated, because if you do it to fast, the result could be disastrous.

Ingredients:
1 egg yolk
125 ml Olive Oil
1/2 dessert spoon mustard
a bit of salt,pepper and sugar
a bit of vinegar (1 spoon)
a bit of lemon Juice (half a lemon)
a bit of Mayonnaise from the shop a water from pickles
To conserve my self made mayonaise i add always a bit of one from the store, or a bit of water from the pickles, this way you get a shelf life of 2 weeks in the fridge. If you do not want to have conservatives just leave that part away.

First mix yolk, salt, pepper,sugar, vinegar, and lemon juice very well with the mixer. Make sure the vessel you use is not too tall, so you can reach all nicely with the mixer.
Now the patience part comes, add the oil very slowly. It should be that slow that you need actually 20 minutes to add all the oil. As longer you mix it, as softer and creamier it gets. Make sure you mix the oil just bit by bit and slowly into it, otherwise it might look good, but after 30 minutes in the fridge the Oil separates again from the rest and it looks awful !

Also a important part is that all the ingredients should have the same temperatures, this apparently helps as well to get a perfect result.
