making dandelion wine

In this post I want to tell you what i just made last weekend, got the Idea from Wolfgang, a German lad living up in the country.
Thanks for the reminder on your blog Wolfgang !

Ingredients you need:

6 liter Water
5 liter dandelion flowerheads (should be open, collect them when its sunny)
3 citrons
3 oranges
2  1/2 kg sugar
20 gr. Yeast

Take a pot and use the liter indication of that pot to measure the dandelion flowers, they should be loose in the pot. Boil 6 liters of water and add it to the flowers. Leave it 24 hours covered in the pot. Than use a strainer to remove the flowers from the water.

A interesting smell have developed. Use the skin and the juice from the citrons and oranges, add that all to a pot, together with the sugar, and bring all to boil.

Leave it to boil for 5 minutes, stir around so that the sugar dissolves in the boiling water.

After let it cool down, until 30 degrees, and put the remaining liquid, which is now pretty sticky, to a fermenter or deep pot.

Add the yeast and let it ferment 8 - 12 Weeks, after siphon the liquid without the bottom into bottles and cork them.

You should store the bottles at a dark place for 6 months, before you consume it.
Safety Notice: Make sure the fermentation is completed, Glass bottles may explode otherwise. (what a mess, never happened to me so far :-)

I will let you know how it goes, and post new pictures from the product as soon its finished.
