Jesus I was a lazy guy recently,
look what I have cooked the other day. Toast....
To be honest, sometimes I shouldn't judge a meal by the time and effort I put into it, but simply how good it tastes and how much others liked it as well....
Its summer again, more or less, its hard to tell if you life on the Atlantic coast in Ireland,
so I guess its fair enough if I spend more time outside fishing,gardening etc. than in the kitchen....
I will be on Holiday very soon, collecting new impressions, etc. The house got a sitter, the chicken are save, and at this point here I am allowed to publish some recipes from my friend Alison.
Alison is also living in West Cork many years and she will share some of her favorite recipes.
More about that later, but I look forward to it as I will read these posts while on holiday.

Kitchen Layout
One of the things I learned while attending the Tapas Cooking class from Richy here in Clonakilty is,
its important to have a tidy and clean kitchen.
I got rid of all that clutter which has nothing to do in a kitchen, but left however my kitchen machines on a prominent place, since I learned from experience if you do not see it, you do not use it....
I also did put a shelf in the window, since first too much sun came through that window for my taste anyway, and also I thought that space was wasted.
I moved my vegetables away from a corner at the other end of the kitchen to a central place where I can keep a eye on them and use them before they go off. I believe by doing this I have now less waste.
I have to do a few more improvements I think so, but i am sure I am getting there to be once really happy with my kitchen.

Recipe: Omelet
Stuck with an Idea what to cook 2night ?
Why not something simple like a Omelet, 2 eggs per person, a bit of milk, in the none stick pan, spices, there you go !
Takes you 5 minutes to prepare, and gives you more time to spend with your loved ones !

Comparison of Eggs
Guess which of the two eggs below is the one from a happy chicken, which one from a chicken from the store ?
Right, you saw also the lovely golden yolk on the left ? Yes, thats the one from one of my hens.

Recipe: Dansk Remulade
A very good friend of mine comes from the north of Germany, and I guess somehow through the influence of the Danish kitchen he felt in love with their remoulade. Since you cant get the remoulade ready to buy in Ireland I goggled the recipe and made it for him on his birthday.
He loves it in a hot dog, but it really goes with everything from the BBQ.
Jens for you, here the recipe I used:
Ingredients:
120 gram mayonnaise
1/2 Teaspoon mustard
1/4 lemon
5 Teaspoon sugar
Salt and Pepper to taste
1 Tablespoon Curry
Parsley,chives and dill
190 gram mixed pickles
2 Tablespoon capers
1/2 chopped onion
Its pretty simple to produce, coop all the herbs very fine, also the mixed pickles and half the onion,
than mix all ingredients together, that's it ! |You might want to vary a bit according to your taste.
Its really yummy and I cant wait until the weather is better and we can have regular BBQ's !

How to make Vanilla Sugar
A few of my recipes require vanilla sugar to be used, however in some countries this is hard to find prepackaged.
Recipes on this blog using Vanilla Sugar are:
Vanilla Kipferl
Egg Rum Cream
and Creme Brule
Its easy to make your own Vanilla Sugar, all you need is:
a stick of a vanilla,
Kristal sugar.
log both in a big jar and after a few days the sugar smells and tastes lovely like vanilla.
Enjoy, and try one of the recipes above !

Heidis new habitat
Thanks to a good friend and his wife I could finally make some progress in my garden.
Through the Clonakilty Favour Exchange we had the Idea to trade each others time to get our garden fences fixed.
I invested in some good wooden poles from Lissavard Coop 20 pieces for 50 Euro and with some Swiss manpower the new fence was pretty fast in place !
Here on the picture you can see Heidi happily discovering her new and improved habitat !
And surprise, surprise, Heidi will become mommy soon, we going to try out to incubate some hatching eggs to stock up our chickens !
One of the chickens is on strike already, So I believe its time for fresh blood here in Clonlin.
I keep you posted how it goes....

After a while of posting here regular its time to make a little review.
A interesting note is, from this thousands of page views every month currently 60% are from android devices.
I believe this high number just shows the trend towards android devices, this is why I also have my own dedicated Android app.

Leberkaese
Something everybody should try once in a lifetime, or at least once while on holiday in the Austro-bavarian Area of Munich or Salzburg is the so called Leberkaese (Liver cheese)
This is a very tasty piece of meatloaf, which is traditionally eaten in a roll
Usually you pop it in the oven or in a pan to reheat this tasty piece of meat which is prepared by butchers on the mainland using liver and other stuff which they cant sell otherwise.
I look forward to have on my next holiday as much of that I can eat !

Beer Bike
Its weekend and I would love to ride with my friends on a bike like that.
I spotted that bike in Hamburg, It got a beer barrel on it an the gentleman mostly who rent that bike can drive along the river Alster and have a beer while on the ride.
Good for Stag parties I guess.

Recipe: Chicken Maryland
So, must of the stress is over and here I am back with more recipes, and soon more about the garden and DIY !
Days can be busy, so I sometimes lookout for simple dishes, ready in less than 20 minutes.
Chicken Maryland is such a dish,
all you need is:
chicken Breast or leg
egg
flour
breadcrumbs
spices
Whisk the egg and milk together.
Mix the Cajun spice into the white breadcrumbs.
Dip the chicken into the plain flour, which you have seasoned with salt and pepper.
Shake off any excess flour and immerse it fully in the egg wash mixture.
Drain off the excess and then fully coat the chicken in the Cajun breadcrumb mixture.
Thats about it, finally fry the chicken in a pan until golden brown.
I usually keep it warm in the oven at 140 degrees until my vegetables etc are ready to serve too.
Its a great quick dish, I usually make a few pieces more to have lunch for the next day at work.
